Ingredients
4 oz cream cheese, softened
1/4 cup almond flour
1/4 cup coconut flour
1/2 cup erythritol or preferred sweetener
1 tsp ground cinnamon
1 tsp vanilla extract
2 large eggs
1/2 tsp baking powder
Pinch of salt
Instructions
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine the cream cheese, almond flour, coconut flour, erythritol, cinnamon, vanilla extract, eggs, baking powder, and salt. Mix until smooth.
Spread the mixture onto the prepared baking sheet into a thin, even layer.
Bake for about 15–20 minutes or until set and lightly golden.
Remove from the oven and let it cool slightly for 5 minutes.
Roll the baked mixture into a log while still pliable, then slice into roll-ups about 1/2–3/4 inch thick.
Serve with additional cream cheese frosting or enjoy as is.
