Korean Army Stew (Budae Jjigae)

A comforting and versatile Korean stew that combines savory flavors with ingredients like Spam, tofu, and instant noodles.

Ingredients

  • ½ block firm tofu (sliced)
  • ½ can canned meat/spam (sliced)
  • 3 sausages (sliced)
  • ½ medium onion (sliced)
  • 2 stalks green onions (cut into thirds, reserving some for garnish)
  • ½ packet seafood mushrooms (or 1 packet enoki mushrooms)
  • 1 slice American/cheddar cheese
  • ⅓ cup kimchi
  • ¼ cup kimchi juice
  • 1 instant noodle
  • 3.5 cups chicken broth/water
  • 1 tbsp gochujang (Korean chili paste)
  • 2 tbsp light soy sauce
  • 1.5 tbsp sugar
  • 2 tbsp gochugaru (adjust to your heat preference)
  • 4 cloves garlic (minced, grated, or crushed)
  • Sesame seeds (for garnishing)

Instructions

  1. In a bowl, combine all the ingredients for the sauce, mixing until well combined.
  2. Take a shallow pot and arrange the tofu, Spam, sausages, onions, and mushrooms in a circle.
  3. Place the kimchi and green onions in the center of the pot.
  4. Pour the mixed sauce over the ingredients in the pot.
  5. Add the chicken broth and bring the pot to a gentle simmer over medium heat. Cover with a lid and let it simmer for 6 to 8 minutes.
  6. Turn down to medium-low and add the instant noodles. Cook for an additional 3 to 4 minutes, stirring gently.
  7. Top with a slice of cheese, then garnish with the reserved green onions and sesame seeds. Serve hot and enjoy!

Notes

Feel free to swap out ingredients based on your preferences. Leftovers can be stored in an airtight container for up to 3 days.
