This hearty Leftover Turkey Soup transforms remnants of your festive feast into a comforting meal, perfect for chilly nights.

Ingredients

  • 2 cups cooked turkey, shredded or chopped
  • 1 cup wild rice
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until softened, about 5-7 minutes.
  2. Stir in garlic and thyme, cooking for an additional minute until fragrant.
  3. Pour in chicken broth and bring to a gentle boil.
  4. Add wild rice, then reduce heat and simmer for about 20-25 minutes, or until rice is tender.
  5. Stir in shredded turkey and heavy cream, mixing until combined.
  6. Season with salt and pepper to taste.
  7. Let simmer for an additional 10 minutes before serving.
