Leftover Turkey Soup

Transform your holiday turkey leftovers into a warm, comforting soup that’s quick to prepare and budget-friendly.

Ingredients

  • Leftover shredded turkey or rotisserie chicken
  • 1 onion, chopped
  • 2 celery stalks, diced
  • 2 carrots, sliced
  • 2 bay leaves
  • Fresh parsley, chopped
  • 8 cups of chicken broth or water
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat. Sauté the onions, celery, and carrots until they soften, about 5-7 minutes.
  2. Add the leftover turkey or chicken, followed by the broth or water.
  3. Toss in the bay leaves and parsley, seasoning with salt and pepper to your liking.
  4. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 20-30 minutes.
  5. Remove the bay leaves before serving. Enjoy your homemade turkey soup!
