Lemon Poppy Seed Energy Bites

A delightful blend of zesty lemon and crunchy poppy seeds, perfect for on-the-go snacking.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond butter (or any nut butter of your choice)
  • 1/4 cup honey or maple syrup
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons poppy seeds
  • A pinch of salt

Instructions

  1. Blend the Base: In a food processor, combine rolled oats, almond butter, honey, lemon juice, and lemon zest. Process until well-combined.
  2. Add Some Crunch: Mix in the poppy seeds and a pinch of salt, and pulse a couple of times to distribute.
  3. Roll Them Up: Use your hands to take small portions and roll into bite-sized balls, about 1 inch in diameter.
  4. Chill for Firmness: Place the rolled bites on a parchment-lined tray and refrigerate for at least 30 minutes.
  5. Enjoy: Once chilled, they are ready to eat! Store leftovers in an airtight container.

Notes
