Lemon Poppy Seed Muffins

Deliciously light and fluffy lemon poppy seed muffins, perfect for breakfast, brunch, or a sweet snack.

Ingredients

  • 1 Lemon, Zest of
  • 2 large Eggs
  • 1/4 cup Lemon juice
  • 2 cups All-purpose flour
  • 1 tbsp Baking powder
  • 1 cup Granulated sugar
  • 2 tbsp Poppy seeds
  • 1/2 tsp Salt
  • 1 tsp Vanilla extract
  • 1/2 cup unsalted Butter
  • 1/2 cup Milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine the lemon zest, eggs, lemon juice, and sugar.
  3. In another bowl, whisk together the flour, baking powder, salt, and poppy seeds.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Melt the butter and stir it into the batter along with the milk and vanilla extract.
  6. Fill the muffin cups about 2/3 full and bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool before serving.

Notes

Best served with lemon curd or fresh berries. Can store in an airtight container or freeze for longer-term storage.
