Low Carb Chicken Salad

A refreshing low-carb chicken salad that’s easy to prepare and perfect for busy weeknights or leisurely lunches.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup dill pickles, diced
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded chicken and diced dill pickles.
  2. In a separate bowl, mix the mayonnaise, Dijon mustard, fresh dill, salt, and pepper until smooth.
  3. Pour the dressing over the chicken and pickles, and mix well to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving.
  5. Enjoy it on its own or over a bed of greens.

Notes

For a lighter alternative, swap the mayonnaise for Greek yogurt. Adjust pickles according to your preference.
