Lucky Charms Treats

A playful twist on classic marshmallow cereal bars, made with Lucky Charms and dipped in green chocolate for a festive touch.

Ingredients

  • 4 Tbsp butter (plus extra to grease the pan)
  • 1 1/2 bags mini marshmallows (15 oz bags) — about 22.5 oz total
  • 6 cups Lucky Charms cereal (measured loosely)
  • 1 bag white chocolate chips (12 oz)
  • 4 drops green food coloring

Instructions

  1. Grease a 9×13-inch baking pan.
  2. In a microwave-safe bowl, melt 4 Tbsp of butter for 20-30 seconds until just melted.
  3. Add the mini marshmallows to the melted butter and stir to coat.
  4. Microwave for 30 seconds, stir, and microwave another 30 seconds until smooth.
  5. Fold in the Lucky Charms cereal gently.
  6. Transfer the mixture to the prepared pan and press it evenly using wet hands or wax paper.
  7. Chill in the refrigerator for at least 1 hour until firm.
  8. Melt the white chocolate chips in the microwave in 20-30 second bursts, stirring each time until smooth, then mix in the green food coloring.
  9. Cut the chilled treats into squares and dip the bottoms in the green chocolate.
  10. Place on wax paper to set completely before serving.

Notes

For a dairy-free version, use vegan butter, vegan marshmallows, and dairy-free white chocolate chips. Store in an airtight container for up to 5 days or freeze for up to 6 weeks.
