Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian herbs (like oregano and thyme)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 1/2 cup parmesan cheese, grated
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt, pepper, and dried Italian herbs.
  2. In a large skillet, heat the olive oil over medium heat until it shimmers.
  3. Add the chicken breasts and cook for about 5-6 minutes on each side, or until golden brown.
  4. Toss in the minced garlic and sauté for about 1 minute until fragrant.
  5. Pour in the chicken broth, allowing the mixture to come to a gentle simmer.
  6. Stir in the heavy cream and chopped sun-dried tomatoes, cooking for another 5 minutes until the sauce thickens.
  7. Add the grated parmesan cheese, stirring until melted and combined.
  8. Serve over a bed of pasta or rice.

Notes

Consider marinating the chicken in herbs and olive oil for richer flavor. Serve with fettuccine or rice, and pair with a glass of Chardonnay for a delightful experience.
