Mediterranean Quesadilla

A quick and satisfying quesadilla filled with feta, mozzarella, spinach, and fresh veggies, perfect for weeknight dinners.

Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach, chopped (packed)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato, diced
  • 1/4 cup red onion, thinly sliced
  • 1 tablespoon olive oil
  • Black pepper, to taste

Instructions

  1. In a mixing bowl, combine the mozzarella, feta, spinach, tomato, red onion, and black pepper. Stir well.
  2. Lay one tortilla flat and spread one-fourth of the filling on one half, then fold it over.
  3. Heat a skillet over medium heat and add olive oil.
  4. Cook one quesadilla for 3–4 minutes until golden, then flip and cook another 3–4 minutes.
  5. Remove from skillet, let rest for 1 minute, slice into wedges, and serve warm.

Notes

Swap whole-wheat or gluten-free tortillas if needed. For milder onion flavor, soak red onion in cold water for 5 minutes before use.
