Mexican Chicken with Cheese Sauce

A flavorful dish featuring tender chicken smothered in a creamy cheese sauce, perfect for any occasion.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon dried oregano
  • 2 teaspoons paprika
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons flour
  • 2 tablespoons butter
  • 1 cup milk
  • 1/4 teaspoon salt (for sauce)
  • 1/8 teaspoon cayenne pepper
  • 1/4 teaspoon paprika (for sauce)
  • 1 cup extra sharp cheddar cheese, shredded

Instructions

  1. Season the chicken breasts with chili powder, garlic powder, onion powder, crushed red pepper flakes, dried oregano, paprika, cumin, salt, and pepper. Let rest.
  2. Heat oil in a skillet over medium-high heat and sear the chicken for 6-7 minutes per side until golden and cooked through. Set aside to rest.
  3. In a saucepan, melt butter over medium heat, then add flour to create a roux and cook until golden.
  4. Slowly whisk in the milk, thickening the mixture, then stir in salt, cayenne pepper, and paprika.
  5. Remove from heat and mix in shredded cheese until smooth.
  6. Plate the chicken and pour the cheese sauce over it. Garnish with parsley or cilantro.

Notes

Great served with seasoned rice, mashed potatoes, or fresh salsa. Leftovers can be stored in the fridge for up to 3 days.
