Instant Pot Turkey Tortilla Soup

A quick and healthy version of classic tortilla soup made with ground turkey, tomatoes, black beans, and corn, all cooked in the Instant Pot.

Ingredients

  • 1 pound ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups chicken broth
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Tortilla strips for serving
  • Avocado, cilantro, and lime for garnish

Instructions

  1. Turn the Instant Pot to Sauté. Add a splash of oil, then brown the ground turkey with the chopped onion and garlic until no pink remains and the onion is soft.
  2. Stir in the diced tomatoes, chicken broth, black beans, corn, and taco seasoning. Scrape any browned bits from the bottom to deglaze.
  3. Close the lid and cook on High Pressure for 10 minutes. Perform a quick release of the pressure.
  4. Taste and season with salt and pepper. For a thicker soup, mash a few beans in the pot or simmer with the lid off on Sauté.
  5. Ladle into bowls and top with tortilla strips, avocado, cilantro, and lime.

Notes

Swap ground turkey for ground chicken or lean beef if preferred. Use low-sodium broth and adjust salt at the end. Frozen corn is convenient and doesn’t need thawing.
