Mexican Street Corn Avocado Toast

A delicious twist on avocado toast featuring zesty corn reminiscent of Mexican street corn.

Ingredients

  • 1 ripe avocado
  • 1 tablespoon cilantro
  • 1/2 cup corn (canned or frozen fresh)
  • 1 tablespoon hot sauce
  • 1 tablespoon lime juice
  • 1 tablespoon Mexican crema or mayo
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1 teaspoon salt
  • 2 slices of bread
  • 1 tablespoon butter
  • 2 tablespoons Cotija cheese

Instructions

  1. Begin by toasting your slices of bread until golden and crispy. Spread butter generously on them.
  2. In a mixing bowl, mash the ripe avocado and combine in the lime juice, chopped cilantro, chili powder, smoked paprika, and salt.
  3. Layer this delicious avocado mixture on top of the toasted bread.
  4. In a separate bowl, stir together the corn, hot sauce, and either the Mexican crema or mayo.
  5. Spoon this zesty corn mixture onto your beautifully spread avocado toast.
  6. Finish off by sprinkling crumbled Cotija cheese on top.
  7. Serve immediately and enjoy the explosion of flavors!
