1 lb shrimp
1 avocado
1/2 purple cabbage
1/4 bunch cilantro
1 garlic clove
3/4 tsp garlic powder
1 lime
1/2 red onion
3 tbsp lime juice
1/3 cup mayonnaise
1/2 tsp sriracha
1/2 tsp black pepper
1/2 tsp cayenne pepper
1/4 tsp smoked paprika
3/4 tsp salt
1 tbsp olive oil
1/2 tsp cumin
8 corn tortillas
4 oz cotija cheese
1/3 cup sour cream
Instructions
Marinate the shrimp: In a bowl, combine the shrimp with minced garlic, garlic powder, lime juice, olive oil, cumin, salt, black pepper, cayenne, and smoked paprika. Mix everything thoroughly and let it marinate for about 10 minutes.
Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side until they turn pink and opaque.
Prepare toppings: While the shrimp cooks, slice the avocado, shred the purple cabbage, and chop the cilantro and red onion. Crumble the cotija cheese for an added flavor burst.
