Oatmeal Apple Breakfast Bake

A warm and comforting oatmeal apple bake that combines the heartiness of oats with sweet, tart apples, making it perfect for breakfast or dessert.

Ingredients

  • 1 Tbsp lemon juice
  • 4 cups Granny Smith apples, peeled and cut into ¼” cubes
  • ½ cup old-fashioned oats
  • 1 cup all-purpose flour
  • 2 tsp baking soda
  • 2 tsp ground cinnamon
  • ½ cup unsalted butter
  • ½ cup granulated sugar
  • ½ tsp pure vanilla extract
  • ½ tsp salt
  • 2 large eggs
  • ¼ cup apple juice (or water)
  • ¾ cup pecans, finely chopped and divided
  • ¾ cup powdered sugar
  • 1 Tbsp milk

Instructions

  1. Preheat your oven to 375°F and prepare a 9” x 13” baking dish with cooking spray.
  2. Toss the diced apples with lemon juice and set aside.
  3. Pulse the oats in a food processor until they become coarse. Sift together the flour, baking soda, and cinnamon in a separate bowl. Add the oat flour and set aside.
  4. Cream the softened butter and granulated sugar together until light and fluffy. Then add the vanilla, salt, and eggs one at a time, mixing well after each addition.
  5. Gradually add the dry ingredients, then stir in apple juice, diced apples, and half of the chopped pecans until just combined.
  6. Transfer the batter to the prepared baking dish, distributing it evenly. Sprinkle the top with the remaining pecans.
  7. Bake for 25-30 minutes, until golden brown and a toothpick inserted in the center comes out clean.
  8. Allow to cool before mixing powdered sugar and milk for drizzling. Slice and enjoy!

Notes

Experiment with different types of apples or nuts to customize your bake. Drizzle with honey or maple syrup for added sweetness if desired.
