One-Pan Juicy Chicken with Balsamic Sauce

A simple yet flavorful one-pan chicken dish featuring balsamic vinegar and cherry tomatoes, perfect for weeknight dinners.

Ingredients

  • 4 chicken breasts
  • 1/2 cup balsamic vinegar
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella cheese, shredded
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large, oven-safe skillet, heat the olive oil over medium heat.
  3. Season the chicken breasts generously with salt and pepper, then place them in the skillet.
  4. Sear the chicken for about 5 minutes on each side until browned.
  5. Drizzle balsamic vinegar over the chicken.
  6. Add the halved cherry tomatoes and sprinkle shredded mozzarella cheese on top.
  7. Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  8. Before serving, garnish with fresh basil for a pop of color and flavor.

Notes

For even juicier chicken, consider marinating it in balsamic vinegar for a couple of hours. Experiment with different herbs for added flavor.
