One Pot Garlic Butter Pasta

A cozy and flavorful one pot pasta dish bathed in rich garlic butter, making it perfect for a hassle-free weeknight meal.

Ingredients

  • 8 oz pasta (spaghetti or fettuccine)
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, melt the butter over medium heat. Once melted, add the minced garlic and sauté until fragrant—about 1 minute.
  2. Toss in the pasta, vegetable broth, cherry tomatoes, red pepper flakes, salt, and pepper. Stir to combine all ingredients.
  3. Bring the mixture to a rapid boil before reducing the heat. Let it simmer, stirring occasionally, for about 10-12 minutes, or until the pasta is al dente and the liquid is mostly absorbed.
  4. Remove the pot from the heat and allow it to sit for a couple of minutes to thicken up.
  5. Garnish with fresh parsley before serving.

Notes

For added flavor, consider adding a splash of white wine after sautéing the garlic. Store leftovers in an airtight container for up to 3 days.
