One Pot Garlic Butter Pasta

A creamy, garlicky pasta dish made in one pot that’s perfect for busy weeknights.

Ingredients

  • 8 ounces pasta (spaghetti or your choice)
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Melt the butter in a large pot over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  2. Add the pasta, vegetable broth, and heavy cream. Stir until well combined.
  3. Bring the mixture to a simmer and cook for 10-12 minutes, stirring occasionally until pasta reaches al dente texture.
  4. Lower the heat, season with salt and pepper, and stir in the grated Parmesan cheese until melted.
  5. Serve hot, garnished with freshly chopped parsley.

Notes

For a lighter version, substitute heavy cream with half-and-half or swap vegetable broth with chicken broth for added flavor.
