One-Pot Ground Turkey Orzo

A cozy one-pot meal featuring tender orzo cooked in a tomato broth with seasoned ground turkey, perfect for busy weeknights.

Ingredients

  • 1 pound ground turkey (lean or regular)
  • 1 cup orzo pasta
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can (14 oz) diced tomatoes, with juices
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup spinach (optional)
  • Grated Parmesan cheese for serving

Instructions

  1. Heat a large pot over medium heat. Add the ground turkey and break it up with a spatula. Cook until no pink remains, about 6-8 minutes. Season lightly with salt and pepper.
  2. Push the turkey to one side of the pot and add the chopped onion. Sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for 30 seconds until fragrant.
  3. Add the orzo, chicken broth, and diced tomatoes with their juice. Stir in the Italian seasoning and adjust salt and pepper.
  4. Bring everything to a boil. Reduce heat to low, cover, and simmer for 10-12 minutes, stirring once halfway through, until the orzo is tender and most liquid is absorbed.
  5. Remove from heat and stir in the spinach until it wilts. Serve hot with grated Parmesan on top.

Notes

For a creamier texture, stir in 2–3 tablespoons of cream or mascarpone at the end. Can be made gluten-free using a gluten-free pasta.
