One Pot Mushroom Rice

A simple and flavorful one-pot dish combining mushrooms and rice, perfect for busy weeknights.

Ingredients

  • 2 cups sliced mushrooms
  • 1 cup chopped onions
  • 2 tablespoons butter
  • 1 cup long-grain rice
  • 2 cloves minced garlic
  • 4 cups vegetable or chicken broth

Instructions

  1. Start by melting the butter in a large pot over medium heat. Once melted, add the sliced mushrooms and onions, sautéing until golden brown.
  2. Stir in the long-grain rice, allowing it to toast slightly while mixing with the sautéed vegetables.
  3. Add the minced garlic and broth, stirring well to combine.
  4. Bring to a gentle simmer, reduce heat to low, cover and cook for about 18-20 minutes or until rice is fluffy and liquid is absorbed.

Notes

For best results, rinse rice before cooking to remove excess starch. Feel free to substitute different mushrooms or add protein like cooked chicken or beans.
