Orange Cranberry Bread

A delightful homemade bread combining sweet orange and tart cranberries, perfect for breakfast or holiday gatherings.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup orange juice
  • 2 large eggs
  • 1 tablespoon grated orange zest
  • 1 cup fresh or frozen cranberries
  • 1 cup powdered sugar (for glaze)
  • 2-3 tablespoons orange juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×5 inch loaf pan.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, combine the melted butter, orange juice, eggs, and grated orange zest.
  4. Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix!
  5. Fold in the cranberries, spreading them throughout the batter.
  6. Transfer the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the bread cools, prepare the glaze by whisking together the powdered sugar and orange juice until smooth. Drizzle it over the cooled bread for an extra touch of sweetness. Enjoy!

Notes

Wrap tightly in plastic wrap or foil to store. Lasts up to 3 days at room temperature or can be frozen for longer storage.
