Parmesan Tomato Tortellini Soup

A comforting and flavorful soup with tender tortellini in a creamy tomato broth, garnished with fresh basil.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 package (9 oz) fresh tortellini
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  2. Pour in the vegetable or chicken broth along with the diced tomatoes, including their juice. Bring the mixture to a gentle simmer.
  3. Add the tortellini to the pot and cook according to package instructions, usually about 5-7 minutes, until they are tender.
  4. Reduce the heat to low and gently stir in the heavy cream and Parmesan cheese, allowing them to meld into the soup. Season with salt and pepper to taste.
  5. Ladle the soup into bowls and garnish with fresh basil for a burst of flavor.

Notes

To enhance flavor, add a bay leaf or Italian seasoning during simmering. For a twist, consider adding spinach or kale.
