Peach Cobbler Muffins

Delightful muffins that combine the classic flavors of peach cobbler in a convenient, fluffy form.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 2 cups fresh peaches, diced
  • 1/2 cup brown sugar
  • 1/2 cup oatmeal
  • 1/4 cup flour
  • 1/4 cup butter, cold

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners to keep cleanup easy.
  2. Whisk together the flour, sugar, baking powder, salt, and cinnamon until well combined.
  3. Beat together the melted butter, milk, and eggs until smooth in another bowl.
  4. Add the wet ingredients to the dry ingredients, stirring gently until just combined.
  5. Fold in the diced peaches, ensuring they are evenly distributed throughout the batter.
  6. Prepare the crumb topping by mixing the brown sugar, oatmeal, flour, and cold butter until you achieve a crumbly texture.
  7. Spoon the muffin batter into the lined muffin cups, filling them about two-thirds full, and sprinkle the crumb topping evenly over each muffin.
  8. Bake in your preheated oven for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool slightly in the pan before transferring them to a wire rack to cool completely.
