Ingredients

  • 1/2 lb Beef
  • 1 Garlic clove
  • 1/2 Green pepper
  • 6 oz Mushrooms
  • 1/2 Onion, medium
  • 2 tsp Mayonnaise
  • 1/8 tsp Black pepper, ground
  • 1/2 Red pepper
  • 1/4 tsp Sea salt
  • 1 tbsp Olive oil, light

  • 3 slices Provolone cheese

Instructions

  1. Start by heating the light olive oil in a skillet over medium heat.
  2. Once hot, add the diced onion, garlic, green pepper, red pepper, and mushrooms. Sauté until everything turns tender and aromatic.
  3. Incorporate the beef, sea salt, and black pepper, cooking until the meat is well-done.
  4. Stir in the mayonnaise for creaminess.
  5. Lay one tortilla flat in the skillet. Sprinkle cheese over half, followed by your beef mixture, then fold the tortilla over.
  6. Cook until both sides are a beautiful golden brown and the cheese has melted, about 3-4 minutes per side.
  7. Remove from the skillet, slice into wedges, and serve hot.

Notes

Serve with guacamole, fresh salsa, or a salad. Leftover quesadilla can be stored in an airtight container for up to 3 days.
