Pineapple Chicken and Rice

A delightful fusion of tropical sweetness and savory goodness that transports your taste buds to an island paradise, perfect for quick weeknight dinners.

Ingredients

  • 2 Chicken breasts
  • 1 cup Pineapple chunks (fresh or canned)
  • 1 cup Rice (jasmine, basmati, or your choice)
  • 3 tbsp Soy sauce
  • 2 cloves Fresh garlic, minced
  • 1 inch Fresh ginger, grated
  • 2 Bell peppers (any color you prefer), sliced
  • 2 Green onions, sliced
  • Salt and pepper, to taste
  • 1 tbsp Oil (for cooking)

Instructions

  1. Heat oil in a large pan over medium heat.
  2. Add chicken and cook until golden brown and cooked through.
  3. Stir in minced garlic and grated ginger; cook for another minute.
  4. Add sliced bell peppers and pineapple chunks; pour in soy sauce and stir.
  5. Mix in rice and enough water to cook (about double the volume of rice).
  6. Bring to a gentle boil, reduce heat, cover, and let simmer until rice is tender.
  7. Fluff the rice with a fork, season with salt and pepper, and garnish with green onions before serving.

Notes

For extra flavor, marinate chicken in soy sauce and pineapple juice beforehand. Can be served cold as a salad on warm evenings.
