Quick Blueberry French Toast Casserole

A comforting baked French toast casserole filled with juicy blueberries, perfect for brunch or holiday gatherings.

Ingredients

  • 6 slices of bread, cubed
  • 1 cup blueberries (fresh or frozen)
  • 4 eggs
  • 1 cup milk
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Butter (for greasing)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish generously with butter.
  2. In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and salt until well mixed.
  3. Add the cubed bread and blueberries to the egg mixture, stirring gently to ensure the bread absorbs the liquid evenly.
