Green Chilaquiles

Delicious and vibrant green chilaquiles made with crispy tortilla chips and zesty tomatillo salsa verde, perfect for breakfast or dinner.

Ingredients

  • 1/2 cup Mexican crema or cilantro lime crema
  • 2 Eggs (optional)
  • 2 cups Tomatillo salsa verde (homemade or store-bought)
  • Kosher salt (to taste)
  • 3 tbsp Avocado or vegetable oil
  • 12 Corn tortillas (cut into triangles)
  • 1/3 cup Queso fresco or cotija cheese

Instructions

  1. Heat the oil in a skillet over medium heat until hot.
  2. Fry the tortilla triangles in batches until they are crispy and golden brown.
  3. Remove them from the oil and let them drain on paper towels.
  4. Pour in the tomatillo salsa verde and heat through, allowing the flavors to meld.
  5. Add the crispy tortilla triangles to the salsa, gently stirring to ensure each piece is nicely coated.
  6. Crack in the eggs now if desired, and cook to your preferred doneness.
  7. Serve hot, drizzling with crema and sprinkling with queso fresco, topped with any additional toppings.

Notes

Consider garnishing with fresh cilantro or sliced radishes for added flavor.
