Quick Lasagna Soup

A comforting dish that combines all the flavors of classic lasagna in a cozy bowl of soup, great for busy weeknights.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef or Italian sausage
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 cups uncooked pasta (lasagna noodles, broken into pieces)
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  2. Add the ground beef or Italian sausage to the pot and cook until browned, draining any excess fat.
  3. Stir in the crushed tomatoes, broth, broken pasta, Italian seasoning, salt, and pepper.
  4. Bring to a boil, then reduce heat to a gentle simmer and cook for about 20 minutes until the pasta is tender.
  5. Serve hot, topped with shredded mozzarella cheese and fresh basil or parsley.

Notes

For a creamier texture, stir in ricotta cheese before serving. Add red pepper flakes for extra spice.
