Ingredients
2 cups cooked rice (preferably day-old)
1 lb boneless, skinless chicken breast, diced
1 cup mixed vegetables (carrots, peas, bell pepper)
2 eggs
3 tablespoons soy sauce
1 tablespoon sesame oil
2 green onions, chopped
Salt and pepper to taste
Instructions
Prepare the Ingredients: Ensure your cooked rice is cold; this helps prevent mushiness when frying.
Cook the Chicken: Heat 1 tablespoon of sesame oil over medium heat, add the diced chicken, season with salt and pepper, and cook until browned, about 5-7 minutes. Remove and set aside.
Scramble the Eggs: Add oil if needed, crack the eggs into the skillet, and scramble until fully cooked. Remove and set aside.
Stir-fry the Veggies: Toss in mixed vegetables and stir-fry for about 3 minutes, until tender.
Combine Everything: Add cold rice to the skillet with chicken and scrambled eggs. Drizzle soy sauce over and stir together. Let it fry for a couple of minutes.
Finish and Serve: Mix in chopped green onions and adjust seasoning with more soy sauce if needed before serving.
Notes
Use day-old rice for best results. High heat is key for achieving that perfect fried rice texture.
