Sausage Potato Soup

A hearty and warm sausage potato soup, perfect for chilly evenings, packed with flavor and nutrition.

Ingredients

  • 1 lb Italian sausage
  • 4 cups potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat a drizzle of olive oil in a large pot over medium heat. Add the Italian sausage and brown until fully cooked. Remove the sausage from the pot and set aside.
  2. In the same pot, add diced onion, minced garlic, sliced carrots, and chopped celery. Sauté until vegetables are tender, about 5 minutes.
  3. Add diced potatoes and pour in chicken broth. Bring to a rolling boil.
  4. Once boiling, reduce heat and let simmer until potatoes are tender, about 15 to 20 minutes.
  5. Stir in the cooked sausage and heavy cream, heating through for another 5 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

For lighter options, substitute heavy cream with half-and-half or coconut milk. Leftovers can be stored in an airtight container for up to 3 days, or frozen for 3 months.
