Savory Asian Mango Glazed Chicken

A delightful chicken recipe featuring a sweet and tangy mango glaze, perfect for a quick weeknight dinner or casual gathering.

Ingredients

  • 2 Chicken breasts
  • 1 cup Ripe mango puree
  • 1/4 cup Soy sauce
  • 2 tablespoons Honey
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ginger (fresh or powdered)
  • 2 tablespoons Lime juice
  • 1 tablespoon Olive oil
  • Salt and pepper to taste
  • Green onions (for garnish)

Instructions

  1. Start by marinating your chicken breasts in a mixture of soy sauce, minced garlic, ginger, and lime juice. Let it sit for at least 10 minutes to soak up the flavors.
  2. While the chicken marinates, prepare the mango glaze by combining mango puree, honey, and a touch of salt in a bowl. Mix until smooth.
  3. Heat olive oil in a large skillet over medium-high heat. Add the marinated chicken, cooking for about 6-7 minutes on each side until golden brown and the internal temperature reaches 165°F (75°C).
  4. Pour the mango glaze over the chicken in the skillet and let it simmer for a couple of minutes, allowing it to thicken slightly and coat the chicken.
  5. Remove from heat and garnish with chopped green onions before serving.

Notes

For an extra layer of flavor, marinate the chicken longer, up to 2 hours or overnight. You can also experiment with different fruits or proteins.
