Simple Banana Bread Bars

Quick and easy banana bread bars made with ripe bananas, perfect for snacks or breakfast.

Ingredients

  • 2 ripe bananas, mashed
  • 1/3 cup melted butter (or melted coconut oil for dairy-free)
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar (or brown sugar for a deeper, caramel-like note)
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter.
  3. Mix in the baking soda and salt. Add the sugar, egg, and vanilla extract, and mix well.
  4. Stir in the flour until just combined.
  5. Pour the batter into the prepared baking pan and smooth the top.
  6. Bake for about 20–25 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before cutting into bars and serving.

Notes

Use very ripe bananas with brown spots for the best sweetness and flavor. For gluten-free bars, substitute a 1:1 gluten-free flour blend.
