Slow Cooker Chicken Breast

Transform humble chicken into a succulent dish with this easy slow cooker recipe. Perfect for busy weeknight dinners!

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 4 tbsp butter (cubed)
  • 4 cloves garlic (minced)
  • 0.5 cup chicken broth
  • 1 tbsp lemon juice
  • 1 tsp thyme (dried or fresh)

Instructions

  1. Season the chicken breasts evenly with salt, pepper, garlic powder, onion powder, and Italian seasoning.
  2. Lay the seasoned chicken in a single layer in the slow cooker.
  3. Scatter the cubed butter and minced garlic over the chicken.
  4. Pour in the chicken broth and lemon juice, then sprinkle the thyme on top.
  5. Cover the slow cooker and cook on LOW for 3-4 hours or HIGH for 1.5-2 hours, until the chicken is tender.
  6. Once cooked, slice or shred the chicken and spoon the flavorful sauce over the top before serving.

Notes

For a richer sauce, consider adding a splash of cream or sour cream after cooking. Feel free to experiment with different herbs and spices.
