Slow Cooker Lemon Herb Chicken with Fluffy Rice

A delightful and fragrant dish featuring tender chicken marinated in lemon and herbs, served over fluffy rice.

Ingredients

  • 4 chicken breasts
  • 2 lemons (juiced and zested)
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 2 cups rice
  • Fresh parsley for garnish

Instructions

  1. In a bowl, combine the lemon juice, lemon zest, olive oil, oregano, thyme, garlic powder, salt, and pepper. Whisk until well-blended.
  2. Place the chicken breasts into the slow cooker and drench them with the zesty marinade.
  3. Pour the chicken broth over the top.
  4. Cover the slow cooker and cook on low for 6-7 hours or high for 3-4 hours, depending on your schedule.
  5. About 30 minutes before serving, prepare the rice as directed on the package.
  6. Once the chicken is tender and cooked through, shred it using two forks and stir it back into the flavorful broth in the cooker.
  7. Serve the succulent lemon herb chicken over fluffy rice and garnish with fresh parsley.
