Ingredients

  • 4 chicken breasts
  • 1/4 cup lemon juice (fresh is best!)
  • 2 tablespoons olive oil
  • 2 teaspoons garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 1 cup rice
  • Chopped fresh parsley for garnish

Instructions

  1. Start by placing the chicken breasts in your slow cooker.
  2. Pour over the lemon juice and olive oil, then add minced garlic, oregano, thyme, salt, and pepper.
  3. Next, pour in the chicken broth to ensure that your chicken stays moist and flavorful while cooking.
  4. Cover the slow cooker and set it to cook on low heat for 6-7 hours or on high heat for 3-4 hours, depending on your timeline.
  5. About 30 minutes before serving, add the rice directly into the cooker.
  6. Once everything is tender and cooked through, fluff the rice with a fork and serve the succulent chicken over the top, garnished with fresh parsley.
