Smashburger Quesadillas

A delicious twist on traditional quesadillas that combines juicy ground beef, gooey cheese, and colorful veggies, all pressed between crispy tortillas.

Ingredients

  • 1 lb savory ground beef
  • 4 flour tortillas
  • 2 cups shredded cheese (cheddar or pepper jack)
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • Pickles
  • Mustard and ketchup (optional)
  • Oil (for cooking)

Instructions

  1. Cook the savory ground beef in a skillet over medium heat until browned, breaking it apart with a spatula.
  2. Heat a small amount of oil in another pan over medium-high heat.
  3. Place a tortilla in the pan, then layer it with the cooked beef, a generous amount of cheese, sliced onions, and bell peppers.
  4. Top with another tortilla and cook until the bottom is golden brown.
  5. Carefully flip the quesadilla and cook until the other side is crispy and the cheese has melted.
  6. Remove from heat, cut into wedges, and serve with pickles and mustard or ketchup on the side.

Notes

For extra garnish, consider adding diced tomatoes or avocado slices when serving. These quesadillas also work great as an appetizer when cut into smaller wedges.
