Southwest Chicken Wraps

Delightful Southwest Chicken Wraps with flavorful chicken, vibrant veggies, and spicy chipotle, perfect for busy weeknights or casual gatherings.

Ingredients

  • 3/4 lb boneless skinless chicken breasts
  • 1 cup black beans
  • 3 tbsp fresh cilantro
  • 3/4 cup corn kernels
  • 3 garlic cloves
  • 1 tsp garlic powder
  • 1 jalapeño
  • 1/2 tsp onion powder
  • 1 small red bell pepper
  • 1/2 red onion
  • 1 1/2 tbsp chipotle pepper in adobo
  • 1 1/2 tbsp honey
  • 5/16 cup lime juice
  • 1 cup rice
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 3 1/3 tbsp olive oil
  • 4 large tortillas
  • 1/4 cup cotija cheese
  • 1/3 cup sour cream
  • 1 tbsp water

Instructions

  1. Start by cooking the rice according to package instructions.
  2. Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the chicken breasts and cook, about 6-7 minutes per side, until thoroughly cooked. Remove from heat and shred the chicken.
  3. In the same skillet, add the remaining olive oil and sauté the chopped garlic, jalapeño, red bell pepper, and red onion until softened.
  4. Stir in the black beans, corn, chipotle peppers, honey, lime juice, garlic powder, onion powder, chili powder, smoked paprika, and salt. Incorporate the shredded chicken into this flavorful mixture.
  5. Warm the tortillas in a skillet or microwave.
  6. Spoon the chicken mixture onto the tortillas, sprinkle with cotija cheese, and top with sour cream.
  7. Roll the tortillas tightly to form wraps and serve immediately.

Notes

Marinate chicken in lime juice and garlic for extra flavor. Customize toppings for personal preferences.
