Spicy Gochujang Noodle Soup

A quick and satisfying spicy noodle soup featuring gochujang, perfect for busy weeknights.

Ingredients

  • 1 clove garlic (minced)
  • 1 stalk green onion (diced – white and green parts separated)
  • 1 tbsp gochujang
  • 1 tsp sugar
  • 2 tbsp oyster sauce
  • 1/2 tbsp light soy sauce
  • 1/2 tbsp rice vinegar
  • 1.5 cups chicken, beef, or vegetable broth
  • 1 serving of noodles
  • 1 hard-boiled or jammy egg
  • Sesame seeds
  • Chili oil

Instructions

  1. Boil your noodles according to the package instructions until they’re cooked to perfection. Drain and set aside.
  2. In a separate bowl, combine the minced garlic, white parts of the green onion, and sugar.
  3. Heat a neutral oil in a pot over high heat until it’s smoking. Carefully pour the hot oil into the bowl containing the garlic mixture to sauté the garlic and infuse the flavors.
  4. Add the gochujang, oyster sauce, soy sauce, and rice vinegar to the bowl. Mix everything thoroughly before slowly pouring in the hot broth.
  5. Stir well to combine, then introduce the cooked noodles to the flavorful broth.
  6. Top your soup with the softened egg, sesame seeds, green onion greens, and a drizzle of chili oil.
  7. Serve hot and enjoy!

Notes

Adjust the amount of gochujang to suit your spice level. Pair with a light salad or steamed dumplings.
