Ingredients

  • 2 ripe bananas, mashed
  • 1 cup strawberries, chopped
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
  2. Mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas until well combined.
  4. Add the baking soda and salt, mixing well to ensure everything is evenly distributed.
  5. Stir in the sugar, beaten egg, and vanilla extract until fully incorporated.
  6. Gradually mix in the flour until just combined; avoid overmixing.
  7. Fold in the chopped strawberries, being careful not to crush them.
  8. Pour the batter into your prepared loaf pan, smoothing the top if needed.
  9. Bake for 60 to 65 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
