Street Corn Chicken Rice Bowl

A quick and flavorful bowl featuring tender shredded chicken, sweet corn, creamy lime dressing, and cilantro-lime rice.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup canned corn, drained (or 1 cup frozen corn, thawed)
  • 1 cup cilantro lime rice
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Combine shredded chicken, drained corn, and sour cream in a medium bowl. Toss until coated.
  2. Add lime juice and smoked paprika, then mix again. Season with salt and pepper as needed.
  3. Spoon a serving of cilantro-lime rice into each bowl.
  4. Top the rice with the chicken-and-corn mixture, dividing evenly.
  5. Sprinkle chopped fresh cilantro on top and serve warm.

Notes

Swap Greek yogurt for sour cream to reduce fat. For more heat, add cayenne or hot sauce.
