Sugar Cookie Cheesecake

A delightful dessert combining the flavors of sugar cookies and creamy cheesecake, perfect for celebrations or cozy nights in.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/4 cup sour cream

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. In a mixing bowl, combine flour, baking soda, and salt. Set it aside.
  3. In another bowl, cream together the softened butter and sugar until light and fluffy. Add in an egg and vanilla; mix well.
  4. Gradually incorporate the flour mixture into your butter-sugar mix until a cookie dough forms.
  5. Press half of this dough mixture into the bottom of your greased springform pan to create the crust.
  6. In a separate bowl, beat the softened cream cheese, sugar, and vanilla until completely smooth. Add in the eggs one at a time, mixing thoroughly. Stir in the sour cream until well combined.
  7. Pour the cheesecake mixture over your crust in the springform pan.
  8. Drop small balls of the remaining sugar cookie dough over the cheesecake filling.
  9. Bake for 45-50 minutes or until the center has set. Allow the cheesecake to cool, then refrigerate for at least 4 hours before serving.

Notes

Store leftovers tightly wrapped in the fridge for up to five days or freeze for up to two months.
