Taco Soup

A cozy and budget-friendly taco soup that combines savory taco flavors with a comforting broth, perfect for any family dinner or gathering.

Ingredients

  • 1 lb ground beef or turkey
  • 1 onion, chopped
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 2 cups beef or chicken broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, avocado, tortilla chips

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat and brown the ground beef or turkey along with the chopped onion until the meat is no longer pink and the onion is translucent. Drain any excess fat.
  2. Add black beans, kidney beans, corn, diced tomatoes, taco seasoning, and broth to the pot.
  3. Stir everything together until well combined, then bring the mixture to a boil.
  4. Once boiling, reduce the heat and let it simmer for about 15-20 minutes.
  5. Taste and season with salt and pepper as needed.
  6. Serve hot, topped with shredded cheese, sour cream, avocado, or tortilla chips.

Notes

Leftovers can be stored in an airtight container for up to 3-4 days in the refrigerator or frozen for up to three months.
