Taco Soup

A vibrant and hearty taco soup that’s easy to make and perfect for busy weeknights.

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 can black beans, drained
  • 1 can kidney beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 2 cups beef broth
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, brown the ground beef with the chopped onion over medium heat until the meat is cooked through.
  2. Drain excess fat from the pot.
  3. Add the black beans, kidney beans, corn, diced tomatoes, taco seasoning, and beef broth to the pot.
  4. Bring the mixture to a boil, then lower the heat and let it simmer for around 20 minutes.
  5. Taste and season with salt and pepper as needed.
  6. Serve hot, garnished with fresh chopped cilantro.

Notes

Feel free to swap ground beef for turkey or plant-based proteins for a vegetarian version.
