Taco Soup

A cozy, one-pot taco soup that brings vibrant Mexican flavors to your kitchen, perfect for chilly evenings or busy weeknights.

Ingredients

  • 1 lb ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 can (15 oz) tomato sauce
  • 1 package taco seasoning
  • 2 cups chicken or beef broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, avocado, tortilla chips

Instructions

  1. In a large pot over medium heat, brown the ground beef or turkey along with the chopped onion until the meat is no longer pink. Drain any excess fat.
  2. Add in the minced garlic and cook for another minute until fragrant.
  3. Stir in the black beans, corn, diced tomatoes, tomato sauce, taco seasoning, and broth.
  4. Bring the mixture to a boil, then reduce the heat and allow it to simmer for 20-30 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot, topped with your choice of shredded cheese, sour cream, avocado, or tortilla chips.

Notes

For a vegetarian version, substitute the ground meat for lentils or additional beans. You can also use homemade taco seasoning for enhanced flavor.
