Taco Soup

A hearty and comforting dish that brings the vibrant flavors of tacos into a warm bowl. Perfect for busy weeknights and customizable for everyone!

Ingredients

  • 1 lb ground beef or turkey
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 1 bell pepper, diced
  • 1 onion, diced
  • Salt and pepper to taste
  • Toppings: shredded cheese, sour cream, tortilla chips

Instructions

  1. In a large pot, brown the ground beef or turkey over medium heat until cooked through. Drain any excess fat.
  2. Toss in the diced onion and bell pepper; cook until softened.
  3. Stir in the black beans, corn, diced tomatoes, taco seasoning, and beef broth; mix well.
  4. Bring the mixture to a boil, then reduce heat and let simmer for 20 to 30 minutes.
  5. Season with salt and pepper before serving. Enjoy hot with toppings!

Notes

For a spicier kick, add diced jalapeƱos. For a creamier texture, stir in a splash of heavy cream before serving.
