Taco Soup

Taco Soup is the ultimate comfort food, combining all your favorite taco ingredients in a hearty, soupy form. It’s quick to prepare, budget-friendly, and customizable to suit every palate.

Ingredients

  • 1 lb ground beef or turkey
  • 1 can black beans, drained
  • 1 can kidney beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 2 cups beef or chicken broth
  • 1 cup onion, chopped
  • 1 cup bell pepper, chopped
  • Salt and pepper to taste
  • Optional toppings: sour cream, shredded cheese, avocado, cilantro

Instructions

  1. In a large pot, brown the ground beef or turkey over medium heat and drain any excess fat.
  2. Add the chopped onion and bell pepper, cooking until softened and fragrant, about 3-5 minutes.
  3. Stir in the taco seasoning, black beans, kidney beans, corn, diced tomatoes, and your choice of broth.
  4. Bring the mixture to a boil, then reduce heat and let it simmer for about 30 minutes.
  5. Season with salt and pepper to taste before serving.
  6. Serve hot, topped with your choice of sour cream, cheese, avocado, or cilantro.

Notes

For a lighter meal, swap ground turkey for beef. Add diced jalapeños for a bit of heat, and store leftovers in an airtight container.
