Taco Soup

A comforting and hearty blend of taco flavors in a warm soup, perfect for busy weeknights.

Ingredients

  • 1 pound ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 3 cups chicken or vegetable broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, green onions, tortilla chips

Instructions

  1. In a large pot or Dutch oven, brown the ground beef or turkey over medium heat along with the chopped onion and minced garlic.
  2. If there’s any excess fat, drain it off for a leaner soup.
  3. Stir in the black beans, corn, diced tomatoes, taco seasoning, and broth.
  4. Bring the mixture to a boil; then reduce the heat and let it simmer for 20 minutes.
  5. Season the soup with salt and pepper to your liking.
  6. Serve hot, garnished with your choice of toppings.

Notes

For extra flavor, brown the meat with a sprinkle of salt. Adding lime juice at the end adds brightness.
