Hearty Taco Soup

A cozy, comforting taco soup packed with bold flavors and nutritious ingredients, perfect for chilly evenings.

Ingredients

  • 1 pound ground beef or turkey
  • 1 onion, chopped
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups beef or chicken broth
  • 1 cup bell pepper, chopped
  • Salt and pepper to taste
  • Optional toppings: sour cream, shredded cheese, tortilla chips, cilantro

Instructions

  1. In a large pot, brown the ground beef or turkey along with the chopped onion over medium heat until cooked through. Drain any excess fat.
  2. Add in the black beans, kidney beans, corn, diced tomatoes, taco seasoning, bell pepper, and the broth.
  3. Stir everything together and bring it to a boil.
  4. Once boiling, reduce the heat and let it simmer for about 20 minutes to allow the flavors to meld.
  5. Taste and season with salt and pepper as needed.
  6. Serve hot, garnished with your choice of toppings, like sour cream, shredded cheese, tortilla chips, and fresh cilantro.

Notes

For a vegetarian option, use plant-based grounds and vegetable broth. Taco soup freezes beautifully; store in airtight containers.
