A delicious and quick stir fry featuring tender chicken, colorful vegetables, and rich teriyaki sauce, perfect for busy weeknights.

Ingredients

  • 1 lb chicken breast, sliced
  • 2 cups mixed vegetables (e.g., bell peppers, broccoli, carrots)
  • 1/4 cup teriyaki sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Cooked rice or noodles for serving
  • Sesame seeds for garnish (optional)
  • Green onions for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.
  3. Introduce the sliced chicken breast to the pan, cooking until browned and fully cooked through (around 5-7 minutes).
  4. Toss in the mixed vegetables, stir-frying for another 3-5 minutes until they are tender-crisp.
  5. Pour the teriyaki sauce over the chicken and vegetables, stirring well to coat evenly.
  6. Allow everything to cook for an additional 2 minutes to heat through.
  7. Serve hot over cooked rice or noodles, garnished with sesame seeds and green onions if desired.

Notes

For extra flavor, marinate the chicken in teriyaki sauce for about 30 minutes before cooking. Store leftovers in an airtight container in the fridge for up to 3 days.
