Smothered Chicken with Jack Cheese

A comforting and creamy smothered chicken dish topped with Jack cheese, perfect for family dinners and meal prep.

Ingredients

  • 3-4 boneless, skinless chicken breasts
  • 1 cup shredded Jack cheese
  • 2 tablespoons olive oil
  • 2-3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • ½ cup sour cream
  • Salt and pepper to taste
  • Chopped green onions and paprika for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rub olive oil over the chicken breasts and season with salt and pepper.
  3. Heat a skillet over medium-high heat and sear the chicken for about 5 minutes on each side until golden brown.
  4. Add the minced garlic and sauté for an additional 30 seconds until fragrant.
  5. Pour in the chicken broth and let it simmer for a few minutes, scraping the bottom of the pan.
  6. Stir in the sour cream and allow to bubble for approximately 5 minutes.
  7. Top each chicken breast with shredded Jack cheese and transfer skillet to the oven. Bake for about 15 minutes or until the cheese is melted and bubbly.
  8. Garnish with chopped green onions and paprika before serving.

Notes

Serve with mashed potatoes, sautéed spinach, roasted vegetables, or dinner rolls to soak up the sauce.
